Raw Zucchini Salad

This is one of those dishes that looks as good as it tastes. Its fresh zesty taste makes this an excellent side dish for a summer BBQ, the fresh flavor cuts through the rich meat or a sweet BBQ sauce. It also keeps well and can be added to some leafy greens, fresh tomatoes and olives for a tasty, healthy lunch.

You may notice from past recipes that this vegetable is a favorite in our kitchen. It’s so versatile and Zucchini are low in calories, around 17 calories per serving so this recipe is great as part of healthy diet.

INGREDIENTS

2-4 Zucchinis

2 tsp International Collection Avocado oil

1 tsp International Collection Apple Cider Vinegar

2 tsp Poppy seeds

1 tsp Ground pepper

Salt – to taste 

METHOD

After you have washed the Zucchini, slice off the ends and grate into a large serving dish.

Add all the other ingredients and stir.

 

If you have some left over this will keep in the fridge for a couple of days.
